MAYHAW JELLY
Servings: 96 Tablespoon
Ingredients:
4 Cups prepared Mayhaw
juice (2 ½ lbs fresh berries)
4 ½ Cups water
1 Pkg. Sure Jell
5 Cups sugar
½ tsp. butter
Prep/Cook Time: 3 Hr. 45 Min.
Directions:
1. Prepare a canner by filling about half full of water and bring to a boil and turn down to simmer.
2. Clean berries by taking stem, and bloom end off. Cover in sauce pan with 4 ½ cups water. Bring to a boil. Turn down and simmer for 10 minutes. Crush berries in pot.
3. Take 3 to 4 sheets of cheese cloth spread over a large bowl and drain well. Squeeze the cloth to get all juice out.
4. Return 4 cups of juice to a sauce pan with Sure Jell and ½ tsp. butter. Bring to a full rolling boil stirring constantly, add sugar and bring back to a boil. Boil for one minute. Skim off foam and pour into sterilized jars. Seal tightly and put in canner coving jars with boiling water1-2 inches bring back to boil – boil for five minutes. Remove from canner, let cool
